Easy Peasy Wholemeal Sultana Scones

Nothing is quite as relaxing as turning on the coffee machine a Sunday morning, putting on an apron and bake a little something for breakfast. Well, that is if what you’re baking is ridiculously easy and require hardly any effort at all but still comes out a real treat!

My mother in law sent me a super easy scone recipe that has become a new favourite and while they normally are made with white flour today I swapped it for wholemeal and I have to say I like them even more! It makes them feel a bit healthier and fills this hungry pregnant lady up for a bit longer. They are Pip approved too which is always a plus!

We ate them with a ton of butter, a sharp cheddar or strawberry marmalade and I think I’m going to have to do them every weekend now.

Here’s the recipe!

3 cups wholemeal flour

3/4 cup full fat milk

1 cup soda water

Pinch of salt

1 cup sultanas

Preheat oven to 200 degrees celsius. In a large bowl place the flour and make a well in the middle. Add the sultanas and pinch of salt. Mix the milk and sofa water in a big glass then pour over flour. Mix thoroughly then place the sticky dough on a floured surface and knead for 30 seconds. Press it out to about 2cm thickness and cut into disks (I just use a good sized glass!). Place on a baking tray lined with baking paper and bake for about 15 min or until they sound hollow when tapped on top. Done!
